easiest meal you’ll ever make

I’ve been making this little treat for years. It’s ridiculously simple. It’s perfect for when you’ve got no fresh anything. Like, say, several years ago when our city got 100 centimetres of snow in one go, and trucks couldn’t get to the grocery stores for a couple of days. Yah. Like that. It’s also perfect for when 2.0 is travelling, as he says he hates chickpeas. The same can be said of shrimp and goat cheese. (Weird.)

You could add any number of veggies or spices to this combo, but the base is always the same: a can of tomatoes and a can of chickpeas. The nice thing about canned-anythings is that you can keep ’em in your pantry for weeks on end. In fact, when desperate, that’s all I use: cans. Chickpeas, tomatoes, mushrooms and a dash of salt and pepper. Yum! Serve it on top of rice (my preference) or pasta.

Picture this: there’s snow. Like, ten feet of it. And you’ve got the flu. You feel disgusting and you look way, way worse. And no one in your life cares enough about you to give you food. There you are in your frayed bath robe, all alone, and you haven’t had food in days.

Don’t you think you should make sure your pantry is stocked?

Easiest Meal You’ll Ever Make (aka Tomato Chickpea Goodness) – download

  • 1 can diced tomatoes
  • 1 can chickpeas
  • 1 can mushrooms
  • salt and pepper to taste
  • 1 small onion (if desired)
  • 1 clove garlic (if desired)

If using onion, saute for a minute or two in olive oil. Add garlic (if using) and saute for an additional minute or two. Add tomatoes, chickpeas and mushrooms. Heat through and let simmer as you cook your pasta or rice. Serve over rice or pasta.

    I’m with your husband on this one, I do not like chick peas and that is putting it mildly. I really wish I did as they are so good for us but for me it’s the texture. I may just substitute them for something else.

    The only thing I believe chickpea is good for is hummus. I will have to try this if it work 🙂

    Mmmm, I love simple things like this, delicious and easy. A bit like me ; )

    I’ll bet this would go nice in a tortilla too if rice is too much work. I love chickpeas but my beloved hates them, he is crazy but that is a whole other can of beans.
