I remember building massive ginger structures at baking school – the assembly was terrifying! Despite having done it myself, I can never get over the entries in Ginger. I’m in complete awe!

Nancy’s entry was one of my brother’s most favourite entries. He wrote: I feel I would be doing a great disservice to Gingerers everywhere if I didn’t make a shout-out to Nancy’s empire state of mind; we’ve seen large scale offerings in the past, stuff that takes a lot of space, or is generally “big” – but seriously – don’t mess with vertical unless you’ve properly come to play.
